Very Dark Stems, wet looking tips, kind of dried out...

First time growing.
Cubensis.
UK environment, where it's been pretty cold ambient temperature.
It's my first time doing anything with mushrooms. I followed some videos from RR which I purchased from recommendation on this site.
Built a SGFC and these are brown rice cakes for feedback.
I've got a little thermometer set up which is measuring the ambient humidity and temperature (not sure how accurate it is). I'm guessing not very...
Firstly, I did add a baking sheet into the base of my SGFC - which was to stop the leakage of water and Perlite through the base of the tub. I had thought I'd read this on a forum and someone personally advised me to add a sheet, but I think I was confused at the time and mixing up a plastic sheet used in monotubs to shrink with the potential shrinking of the substrate. There are however, holes in the bottom of the SGFC.
I have since learned that I should probably have measured and drilled enough holes into a correctly sized SGFC, as this tub might be too small to be honest.
SGFC is 18cm tall, 34cm long, and 30cm wide. there's probably only 3.5cm of Perlite in the base. There are holes on all 6 sides, which I pierced with a hot needle, rather than a drill (which was starting to break the plastic).
I have two cakes (BRF) - and they're both developing totally differently.
They were inoculated at the same time, using a multi-spore syringe.
One cake is producing a lot of pins from around the top of the cake - some thick, and growing quickly - but they look slightly discoloured.
The other cakes, which was slow to develop has produced only a few pins, that have grown more like mushrooms - but really snaky and thin stems. These do however, look more like mushrooms.
The thicker stems are reaching the lid and touching the lid of the SGFC. Should I try and pick out these big one reaching the lid, and leave the rest?
Any idea what is wrong with them - I'm guessing not enough FAE, or incorrect humidity? Or is it contamination causing the brown staining and wet soggy look?
Secondly, anything I can do to improve their growth at this stage?
I'm on the hunt for a good hygrometer and thermometer, as I don't believe the tiny digital one I purchased (cheap of ebay) is of any accuracy or use, and like an idiot, I did have it placed on a tiny piece of tinfoil sat on the Perlite, which is reading 99% humidity (which I've realised is probably always going to be the case if it is virtually touching the Perlite).

They look dry because sgfcs dry out a lot. (Shitty fruiting chamber if you ask me)
The dark stems are just a genetic phenotype.
The caps need the moisture most.
