I was gonna go the same route and cover the shoebox with plastic bags but my OCD kicked in. I couldn't get an answer with how many holes to poke, how big, how far apart, should I slice it.... so on and so forth. Then I found the post about just leave the lid on and unsnap it when the fruits start to come up. Easy peasy less for me to think about.

I just sliced 2 holes at the tub level on the long sides and 1 vertical slice on the short sides at the top

It’s all up to you. I usually suggest newer growers let the caps open fully and let some spores drop. This will ensure you get the most dry weight you can but also will let you judge in the future when you need to be worried about spores exploding.
They don’t just instantly go to crazy spore, you’ll get some warning dustings first.
I harvest everything at once because you’ll eventually start to see that even if you just harvest as they mature, the smaller mushrooms stay pretty small and it’s not worth it to have to come back later and get the rest. But I also have more mush than I can eat so I can do that easily and harvest round capped mushrooms that are a bit smaller than they could be just because they look better in the bag and take up less room.
If you only have a little bit o mush it’s probably worth it to get the most of out each grow and not worry about convenience and looks.
