Time for Casing? Not the Pins I'm Expecting.

Hello everyone,
This is my first grow. I've learned so much on what to change on my next time through. At this point, a PE grain spawn consisting of millet and rye (the spore did not take to the millet in inoculation, but had no issues with contamination and fully colonized the rye) was mixed into manure substrate.
The mixture went into the monotub 14 days ago and has maintained a steady ambient temp of 73F in the room. I've had a bit of a rollercoaster of RH as I've found it difficult to control. It has been no less than 88%, and no more than 97%. At least I know that FAE is no problem. I decided I would case with coco coir as the PE seems to very much need it to prevent from "blobbing out."
I am at the point now where I believe I am seeing pinning. This morning I awoke and there was what appears to be a lump of a cap in the direct center of the tub, and around the outer edges. I've attached pictures of what I believe to be the beginning of pins, and I've circled these lumps that I believe to be the formation of a cap, please correct me if this is wrong. My question is, should I wait for this to develop more before I case with coco coir, should I case the substrate now, or am I too late for casing (and is there such a thing)?

Update: I cased it. There were "pins" the size of about 7mm tall sporadically here and there. Did I just kill them, or was this a smart move?

Thanks Myc097, I have no idea what the consequences could be of late casing, so it's good to hear some reassurance. I pasteurized my coco coir with insanely hot boiling water in a sanitized bucket, then covered in tin foil until the next day. Then, I covered the top of my sub with about 1.0 cm of the coco coir. I did not tamp the casing down because I was concerned about harming the existing pins.
I'll update the thread with photographs if I get pins through my casing looking proper.
