Gymnopilus??

The cap is scaled. The stem is firm and wood like, but not difficult to pull apart. The stem appears to have a very small hollowness in the center, but is hard to tell for sure. They do not bruise blue, but are  slightly bitter tasting and smell of maple syrup with a hint of cinnamon and an unmistakable mushroomy scent. They were found in a Central Texas field after our recent rains. Can someone who knows what they are talking about tell me if these are for sure Gyms or not? Is there any chance in hell these are Galerina or another deadly look alike??

Yes they're a Gymnopilus.  Not positive what species you have.  Consider maybe G. lepidotus.

pretty sure these are in the aeruginosus-luteofolius clade judging solely on the pins. Would you consider sending me a few specimens for study?
