So i've been struggling to fruit my PF cakes and i'm not sure what I'm doing wrong. Can someone give me some advice on fruiting? this is my current set up:

its kind of up against the wall but I don't have a whole lot of space to work with. I spray them down every 6 hours and fan them for 30 seconds immediately after. These were my cakes a week in the chamber

these are my cakes now:

The mycelium used to be completely white, but now the older ones have an orange tint to them. I'm afraid the same thing is gonna happen to my other cakes if i don't do something.

Looks to me like they are drying out. Do you have holes all the way across all 6 sides of that SGFC, including the lid? I see some holes missing near the top... having it against the wall could be hurting as well. Are you re-hydrating the perlite with water pretty frequently? It can dry out.
Also, do you have something else mixed in with your perlite there? What is that? (first pic, bottom left)

I have holes on all sides, but I probably could have drilled more. The thing at the bottom of the SGFC is some window screen, it looked like the perlite was clogging up some of the holes at the bottom of the tote so I thought it might help. also how often should I rehydrate the perlite? The perlite is damp to the touch right now.

If it's damp you probably don't need to rehydrate.
And I'm not so sure that window screen is a good idea... anything that affects the airflow through the perlite can mess up humidity as well because that's how it's getting humidity.
All I know is those look super dry

Looks like you didn’t roll your cakes in verm enough and that’s why they aren’t retaining moisture well. If they have been in the chamber for 2-3 weeks already you should probably re-dunk your cakes because most likely they have dried out to much.
Also when you first put your cakes in there you didn’t put tinfoil underneath and let them sit directly on the perlite. It’s known that if they sit directly on the perlite it will wick moisture out of your cakes. I would re-dunk the 2-3 week cakes again for 8-12 hours. Also check out CBK’s Bottom Watering Tek.
If the cakes you put in a week ago were also sitting directly on the perlite i’d recommended Dunking all your cakes. Dunk them for twelve hours actually! And with misting after you put them back in you want to give enough time for evaporation to happen in between misting. Do a light misting over your cakes to let the droplets fall on to them, then when they stop glistening mist again. There’s no time frame to misting.
Forgot to add that you should dunk the two and three week cakes separately from your one week cakes just incase they have some kinda hidden contamination starting. Not all is lost, you still have a fighting chance
