Rye too dry? - Adding Rye to rotation

Oats are my go to and added WBS but this is my first run with Rye. I’m working with Rye to mix it up for a few older cultures and too expand my skill set. I went with a 13 hr soak and boil. I was shooting for 12 hours I couldn’t get to it so they sat for a little over 13. Went with a soak to gently hydrate and I read somewhere a soak satisfied multiple items being the debatable indospores, improved nutrients by germination, and fewer burst grain. Your input here is welcome.

Rinse x3 hot water
Add hot water to 3” above grain
Sprinkle 1 tbsp gypsum on top no stir
Soak covered 13+hr one stir mid soak
Straight to boil timer of 10 min started at full rolling boil
At 10 min not all rye changed to opaque and not one burst
Boiled a few more min stirring and watching for burst grains
After additional 3 min all grain were plump with opaque skin and 2 burst were seen
Immediately strained
Spread out on towel while I prepared plastic lids, jars, and silicone rings.
Replaced all SHIPs. I’m not sure I’ll be using them but the hole needs covered and the previous had a few runs on them. I’ve abandoned the syringe filters because they choke off the growth
Single MP added
Grain dry to touch filled to 600 line weighing 487g
Lids loose, heavy duty foil
7 jars water close to grain line but before jars bounce around
2 tbsp vinegar added to keep jars clear
PC vented at hard steam 4 psi for 10 min
Psi was 5ish when vent covered
16 psi for 120 min
Shut off and went to bed

This morning I tightened lids and saw this. Too dry? Looks like the 120 min drove moisture out. After sitting at room temp a few hours there was slight condensation inside. I shook a few and took this pic

How much water you put in there you`re nearly on line with grain?
Does your pc seal properly, and what kind of pc you`re using?

Water added to grain fir soak and boil was 3” above grain

Single quarter glued to the vent cap which breaks pressure at around 17 psi

I fill the PC to the first line then after all 7 jars are loaded I filled with another 300ml. It was half a jar poured and the jars could be bumped with my hand and sit solid on the insert.

They aren`t shooked up well to redistribute moisture.
I don`t have a 23qt presto, but it needs just 3 quarts of water,
no matter how many jars.
I guess your jars don`t sit elevated on a trivet?

Trivet is about 1/4" thick. Would the amount of water drive out the moisture? I mean I guess it would if boiling water were surrounding in place of steam. I add extra water because of the extended vent time. So I can't say how much water is present when I seal it up but oats and WBS do ok. I'm thinking the grains we not hydrated enough but look at the ones at the bottom of the jar. That is what they looked like going in.When i popped the lid the water level was down as it would be filling to the first line. I almost boiled the thing dry once with only water to the first line and waiting for hard steam before starting the vent cycle clock.

Leaving them in the PC overnight is not something I usually do.


These are too dry though aren't they?

So the jar, seal, and foil weigh about 460. The weight of the wet grain per jar was 487ish I think. Should have written it down. 

Jars with foil and grain now weigh between 814-857 which is all over the place.

There is no way these lost 90 - 133 ml of water. right?

the only variable I can think allowing for such high differences would be loose lids? Between the lids allowing varying open space and the MP maybe they were too exposed?

I would inoculate them and see what happens.

I had rye that looked more dry and worked perfectly fine. Personally I prefer grain on the dry side. I'm pretty sure your rye will get colonized.

But a TC will have a better eye and more experience.

So I poured about 20ml sterile water per jar while knocking up with agar and shook them up well.  They looked wet that night but recovered by morning. They are all doing good so far.
