PE Uncut shoeboxes/mini grows. Do these look ok? Odd yellow color on sides.

Hey guys, this is my first grow,and after searching the forums up and down I cannot find anything that looks similar to what I have going on. Any help or input would be greatly appreciated! I used PE Uncut spores from sporeworks, inoculated rye berry, took almost a month for two 1lb bags to colonize, but they were nice and white, healthy looking mycelium. Around July 25, I spawned to a 5lb mix of coir, maneur, verm, and gypsum. I didn't have enough verm for casing layer so I mixed with some of the substrate. (more verm) I made two shoeboxes and put the leftover substrate into small containers I had just to see if it grew anything. Haha. .
It's been a month and I'm finally getting tiny fruits. But I'm worried about this yellow coloration that's been forming on the sides of my shoeboxes. I also have tan/brown masses growing on the sides which I'm hoping are mutant side pins, because they look like sclerotia and smell like mushrooms. I'll leave a link under this to the imgur album so you guys can take a look. Thanks for everything you guys do, I appreciate this community and look forward to hearing your thoughts on my mediocre first grow. Haha. Feel free to make fun of me if the methods I'm trying are ridiculous. Hahaha. Here's the album below!

Looks like they might be too wet, the yellow spots could be metabolites, could be bacteria, do they smell sour, or chemically, or strong at all?
The tan and brown spots are more than likely a contamination, there shouldn't be spots like that.
Once the substrate is made to field capacity, you don't need to add water until after the first flush, next time don't add the straws and don't water the substrates.
If I were you, I'd just use CVG substrates until you get a bit more experience under your belt, that way you don't have to worry about Pasteurizing and you can just sterilize the substrate.

Got it. I appreciate the input. I read that yellowing on the surface of the substrate could be due to dry surface conditions, so I assumed it was happening on the sides because of that (even though surfaces look like a nice cotton white) and decided to add a few drops of water daily to the straws in the center. I'll hold off on that then. I had two other shoeboxes that developed a slightly funky smell with odd creamy looking mycelium and decided to toss them. These tubs/mini tubs actually have a healthy mushroom smell. Which is why I'm so puzzled by it. Haha. Thanks for the input. I'm just misting/fanning twice a day now, and I'm making sure it's covered in fine beads and not pooling or anything. I'm getting more pins every day.
I've grown sclerotia and the spots on the side seem so similar to that, that I'm hoping that's what's going on. Since penis envy tends to form blobs sometimes and all. They also have that fresh mushroom smell, no sourness or anything.

Yeah it can yellow on top from too much water, and too little water lol, sometimes this is just a huge game of trial and error.
I'd they smell like fresh mushrooms and sourish or chemically smell I'd be willing to be that it's just metabolites and not a bacterial infection. IME bacteria always smells pretty strong.
