Rice has been domesticated in China for more than 9000 years and has been the staple crop of China since the neolithic age. Though yes, the Romans were even more reliant on set of grain crops than even the Chinese were.

The fruit we ate as monkeys is not necessarily the same produce we eat as humans. Almost everything we eat regularly has domesticated with us. Grain agriculture was only an 'upgrade' as far as it allowed for stationary societies to settle into an area and divide labor into things that were not solely related to food. The varied diets of nomadic gatherers were still nutritionally healthier than the grain only diets of settled peoples who relied on predictable rain, pest control and soil quality in order to eat for the year.
Grain only diets required territorial expansion and empire building for survival for most societies throughout history. That drove technological innovation in agriculture, warfare, city building, language and government administration in order to make everything work. Rice and wheat were no more freeing to human populations than it was enslaving in the grand scheme of things. Societies with grain based agriculture tended to be unhealthier, but were more skilled in trade, warfare, territorial expansion and education out of necessity to upkeep stationary societies.

There are easier ways of getting various vitamin deficiencies. Though I prefer brown rice to white, except for certain food where varietals of white rice are required to make.
