When to harvest?

The big ones are beginning to lose their veils and I was thinking of cutting them away but they are either clusters or in between some smaller mushroom so I was thinking maybe to just harvest all at once.

I’d wait for the caps to open and get as much mush as possible before spores drop everywhere.

The mushrooms produce significantly less psilocybin after spores start to drop so for eating/potency most people advise harvesting during/right after the veil breaks (as the spores drop soon after this).
However, if you want to take spore prints or you just want cool looking/big mushrooms you may wish to wait until the cap flattens out.
It is ultimately up to you though!

Those still have a lot of growing to do. I definitely wouldn't harvest yet. You can, but it would be a waste in my opinion.

I'm pretty sure there has been significant debate over whether or not they stop producing psilocybin altogether or if they just produce less.
Either way there is less psilocybin production once they mature though from what I've read/heard. As with anything I could be wrong though

It’s possible they start producing less psilo at some point, but those still have plenty of growing to do and more weight means more total actives, even if they’re present as a smaller ratio to total weight.

This is my personal opinion. I harvest a few monotubs of fruits a day.
Spores taste, smell and look like shit. When a fruiting body is making spore it's done making psychoactive compounds from what I've been reading. In my personal experience it's favorable to make up weight by sheer volume of production if that can be done. Then you ensure that you've produced the most psychoactives by weight as you can.
I harvest when the cap begins to expand and when the veil is about to tear or drop. Some of the fruiting bodies I harvest the veil simply just comes away in one piece with the stipe. Some it comes away in pieces. Either way the goal is the same. Get them when they DON'T taste and smell like shit and get them when they're at their most potent by weight.
Letting them mature beyond this will gain you 10-20% in overall weight but you sacrifice far too much for this. In my opinion. I produce a fuckton but it's just not worth it to me to sacrifice bag appeal and edibility
When I share my dried fruits with friends I like to see their surprise when instead of gagging they find the fruits to be enjoyable to munch on.

Not proven old info, new growers repeat and this is how 20 years later we still have misinformation. If there's a difference its unnoticeable. Before the veil breaks you get better shelf life (pre-dry) and better durability and they fit better for storage

No problem. Avoiding the mess caused by spores is definitely reasonable. I don't mind it much myself but to each their own
