Mono tub substrate pasteurization tek

I'm wondering if contamination (or lack of fruiting) could be related to the pasteurization process of my substrate (50/50 verm/coir + some gypsum).
I'm getting the mix to field capacity prior to baking it in the oven (in a sealed container). But when it comes out of the oven, and cooled, do I check it again for field capacity, and add more water (possibly with microbes...)?
What is your technique for this step of the process?
How do you keep the substrate at the correct moisture level throughout the monotub fruiting process? (I am misting every day, but not sure if the substrate brick is too wet or too dry).
Thank you.

I use the bucket tek. I don't know how to put links from my phone but look it up in the search bar.

99% of the time contamination comes from spawn. I've let coir sit in open air for weeks before and nothing ever grows on it. It's fairly contam resistant. I would just use bucket Tek, or an ice chest to pasteurize. 4qts water to 650g dry coir always works. It will keep proper moisture level throughout the grow cycle, mist if things do get dry. Misting every day is not needed, I usually mist mine a couple times 10 days later, or when they need it before pinning I like to keep optimal conditions

Yeah you don’t need to pasteurize coir, if anything I’d sterilize the verm before bucket tek.

I've also just used bucket tek - with a 5 gallon bucket from the hardware store and haven't had much in the way of problems.
Contams for me have been from spawn, poor process, or environmental conditions.
Bod's Easy AF bucket tek is a good source of info: https://www.shroomery.org/forums/showflat.php/Number/24077162#24077162
A cooler is used in this tek and I might too, if I had one, but have been just fine with a 5 gallon bucket and using the ole Damions 50/50 for the last few years.
I'm still a noob, but have found that the more things you do, the more things can go wrong...Find as simple a proven tek as possible and get a comfortable understanding before trying teks with more processes/complexity.
That's just me. Do what works for you as you progress.
