Jars are almost fully colonized but I have to leave for a week in 3 weeks. What to do?

I am growing mushrooms the first time. I inoculated 4 weeks ago and my jars are pretty much colonized with no contamination. It looks really good to me. As far as I have read it would be good to let the jars sit for another week so the mycelium can strengthen. the problem is that I have to leave for a week in 3 weeks and nobody can look after the mushrooms. As far as I understand the fruiting until harvest takes around 3 weeks so I wouldn't be there once harvesting begins.
I am not sure what to do now. I could start fruiting now and hope it's all done in 3 weeks. That's what I am thinking now. or can I let the mycelium keep colonizing for the next 4 weeks until I am back? that seems a little long.

It's hard to see with the light, but they seem almost completely colonized. I think you'll be fine. You gotta let them consolidate for a week or so.

Im not sure if cakes are any different than tubs, but I normally see pins 1.5-2 weeks after spawning. Then a few more days to a week to mature to harvest depending on the culture and how clean the spawn is. So they'd probably be ready for harvest or maybe a few days past harvest time by the time you get back, depending on how much longer it takes to get to 100% colonization. A late harvest is fine. They'll just drop spores

I have done some more reading and it seems you can put the jars into the fridge to "suspend" them. Maybe I should do that?

Yes you can, if they`re fully colonized.
Don`t shake them up yet.
Leave tin foil on the jars for the fridge.
When you return, take them out of the fridge to reach for room temperature.
I suggest to shake them up then, and rehydrate with tap water, they may have lost some moisture.
Just pour water in, and let sit for 15-20 minutes to absorb.
Pour water off and spawn as usual.
