Beginner Questions about indoor growing!

Hi guys! 
My husband and I would like to start growing one indoor plant for personal and medical use, so we're looking for some advice on how to get started.
We'd like to use our small walk-in pantry as a grow room. Would it be possible to use this space without heavy modifications? With only one plant, would a small fan be enough air flow in a sealed closest?
We used to grow shrooms so we still have a few lights (6500k bulbs), some coco bricks and verm. In the start of our research, we saw that some guides use these materials. Are these materials smart to begin with since we've already worked with them? We're just looking for some guidence for the most cost effective and robust grow that a single plant can provide!

Roughly how big is the area you plan to grow in? People have grown in things as small as PC cases with little to no issue. Especially with just one plant you probably won't have to make any modifications either, the biggest concern I see being the airflow in and out of the area.

The pantry is around 5x2.5. What would you suggest for increased airflow without any modifications?

If there's a sufficient gap between the floor and the door, you may be fine with just a fan pulling air out from under that crack. The fan would also provide enough airflow for the whole area since that's pretty small.
As for the rest, if the walls are painted white then they will be fine for now. Besides providing them the airflow and lights everything else is pretty much to increase yield, so I'm not too sure how far you are willing to go with or without modifications.

The gap is about half an inch, so idk if that'll work. If it doesn't what else would you have in mind? How far would we be able to go without making any modifications to our actual house?
Would just opening the room up every 10 or so hours be sufficient enough?

With just one plant, a fan, and being able to open the door to release heat and restore air levels I don't think you'd need to make any modifications. Mind you, it won't be the most incredible sticky icky, but you without a doubt can get what I would call medicinal quality.
If you live in a particularly dry area, look into an ultrasonic humidifier.
Having one plant I don't forsee needing to do any modifications to the house itself.

I would recommend leaving the door cracked open. I did that for years in a closet.
Obviously smell and light would get out.
You'll need to modify/allow for air transfer if you need the door shut. A crack under the door isn't enough. I used to grow in an extra bedroom, and even having a few plants in an empty room would make it too hot and humid with a closed door.

I also have some books I read that I found pretty helpful: Marijuana Horticulture: The Indoor/Outdoor Medical Grower's Bible by Jorge Cervantes (pretty much covers everything you might need to know at a basic start-up level) and Marijuana Garden Saver: Handbook for Healthy Plants by Ed Rosenthal

Haha same, or I'd have a set time every day where I'd go and open up the door to air it out. I did fine cracking mine but I also ran LED in the area. Definitely not feasible with an HPS or the like.

Have you considered purchasing a portable closet? I grew for years in this setup, 4 plants in 3 gallon buckets, averaged 3/4 lb per grow with a 600watt hps and one can fan with a cool tube. I think the closet cost me like 80$ at home depot and i bought a couple sheets of plywood that i attatched to the back of the closet to give it some more strength.
i think pretty much everyone already hit the major points here. You can do it, it wont be optimal, and you wont get the best buds or yields, but you can get something. At the very least you're going to need to upgrade your lighting to a CFL or LED, doubtful the bulbs you currently have would be good for anything but light vegetative growth.

find a cheap door that's the same size with a doggy door or something or just take the door off hang a piece of cloth or rig something up

I think you will have plenty of air flow for one or two plants. When you say 6500k bulbs, are you talking fluorescents? Fluorescent bulbs are ok for veg but not ideal for flowering.

I'm gfuessing the pantry is not actually sealed, a tiny gap in the door frame would be enough for co2 exchange. A tower fan for airflow. If you want to use the entire area you'll need to use more than cfl. HPS/metal halide lights would require ducting the heat out. If you go LED you might be fine, could have a recirculating carbon filter standing in the room for smell control. I have a 400w LED for sale if interested.
