Lions mane bags. What next?

Lion's mane was spawned to rye and transfered to maple sawdust supplemented with brown rice flower. It is growing really well and should I cut the top of the bags off or slit the sides or do I need to wait till its completely covered the sawdust?

You're a bit late, as you can see it's already fruiting quite profusely on the tops of your blocks.
Normally you would have cut an x or a hole a while ago and forced it to fruit through that, but since it's too late for that, at this point I would probably cut off the bag just above the substrate layer and allow those fruits to fully develop.

I had seen videos for commercial blocks from TMC that the coral formation on top should be discarded because its usually bitter the bag folded and taped and then x the bag on the side. I was worried about opening the bag too soon and being contaminated.

Yeah the coral formation isn't ideal for sure, it's caused by not enough air, but the goal is to keep the bag tight against the substrate so it doesn't grow that stuff, instead letting the substrate waste energy and nutrients growing something you're gonna toss.

The primordia formation on the top of your block indicates a few things: - a temperature drop from optimum of 70-75f - a drop in CO2 concentration / an increase in FAE - an over incubation
Ideally, Hericium Erinaceus should be promoted to fruit from a tiny hole in the side of the bag once the block is fully colonized (10-14 days @ 75f)
I have seen and heard instructions similar to the ones you mention with discarding the top layer, but i am in agreement with the poster above that discarding anything is a waste of energy and loss of biological efficiency.
If you follow that procedure, you will only harvest a fraction of the potential of the block, and even that will have elongated spines that are loosely arranged into coral formations rather than the picture you have in your mind of a nice fruiting body.
so, the way i see it, your chances of coercing primoridia to form out of a small hole are limited at best at this point so it's best to follow thru with the TEK you've used to get here, note the strengths and weaknesses, then try the mentioned method next run.

I've not noticed a temp drop causing LM to fruit invitro, since it does it every time no matter what you do. Do you usually cold shock it?
Also, airflow increase has nothing to do with it since the bag was closed the whole time. LM always fruits invitro, the only trigger is time.
