How long are you pc’ing your grains for?

Are you sure your contamination isn’t from your inoculant?

Have you just let a jar sit, to see if a contaminant grows on its own?

Flow hoods don’t fix contamination issues, people are plenty successful with still air boxes

If contaminants are growing on their own in the jars, then your grains aren’t sterile, or contams are making their way into your jars. Check your PC procedure, make sure you are venting your pc for at least 10min before throwing the weight on.
That’s all I’ve got for you, someone with more experience may have better ideas.

Also, take a look at your jar lids, since contams may be coming through there.

And try pc'ing for three hours.

Do you cover your jar lids with foil in the pc?

Burst grains aren't TOO big of a deal. As long as its only like 5% of the grains that are burst. Of course, the less burst grains, the better.

Excess moisture is a bigger issue, and is why I asked about the foil. Without foil, excess moisture can enter the jar during pc. Not much maybe a few drops, but enough to make your jars bacterial. This is especially true if you use polyfill

Have you recently switched brands of oats, or even just started a new bag of your usual brand?

I've heard of people having a bag of oats where the endospore count was so high the oats were unusable, but I am not sure if they tried pcing for 3hours. I've never personally had that issue, however.
