Spawn Jars that lightly smell like formenting alcohol....

I have a batch of jars that smells like they are formenting. Looked perfectly colonized, then started to lose some growth, and when inspected and smelled, they have a distinct odor. A little like a the smell if you leave orange juice in a gallon container with the top on when it is 99% empty - you find the container puffed out and fomenting smell on opening.
It was a complete G2G batch. So the problem is either in the grain prep or transferred from the master jar.
The only other possibility is heat because it got to 82 degrees for a week in their room.
Mold or obvious other contains are non-existent, and when I shake and let re-colonize, it gets to 80% and then sort of stalls again and then starts looking sickly.
Any ideas what this could be?

If it smells anything like something that’s not mushrooms, it’s bad.
But are you pressure cooking properly and are you using a SAB to inoculate in? I doubt 82 degrees would cause much issues really considering I’ve recently succeeded in 86f before I got a ac for the room.
What are you using to inoculate ?

82 F. is warm in my opinion, I keep my spawn jars/bags room temp...high 60's to low 70's. Bacteria can thrive even in the low 80's.
How did you inoculate your master jars before you G2G them.

I definitely wouldn’t keep my jars at any temp above 75f now but I had to keep em at whatever the room reached before I got an ac.
The temp caused issues but I had plenty of success as well so I doubt it’s just related to the temps. I bet it’s pressure cooking times or grain prep in some way. If the inoculant is clean, then it’s either the grain prep or sterile tek.
Prepare some jars and don’t inoculate one or two and see how they do and smell. If nothing contams then you know it’s something related to your sterile tek or the spores. You can also do a blank inoculation and leave a jar uinoculated but still stick a needle in that’s sterile and that will tell you if it’s related to what you’re doing for sure. If it only happens in jars that are inoculated fully then it’s your spawn.

The smell is bacteria, I always think rotting apples lol. I agree with dropping the temp, low 70s is where I get the best results.
If the jars colonize all the way they’ll usually still fruit ok for at least one flush but I’d use 1-1 ratio with for sub so it colonizes quickly.

it's 1 batch of 14. the smell and failure is totally isolated to the one batch. So' although I want to think it is heat, it is counter-intuitive when the other 13 were fine... sooo????
Same grain prep on all. Good PC and technique. G2G in a SAB.
I actually shook these jars, watched them attempt to colonize again, and they get close but never lose the "something is off" look.
Does anyone know what bacteria or mistake can cause the "fomenting" smell? One theory is that some of the rye "malted" during the soak releasing a lot of sugar, and the once the temp got too high the sugar in that batch started to turn into alcohol.

I let this sit for another 2 weeks to see if it turned moldy, other colors, etc... and it pretty much stayed the same, with much of the jar colonized and solid as one would expect. The ONLY difference after 2 weeks was that the bottom ¼ inch of the jar, where the grain looked wet, but there was no standing water and no mycelium.

I think it's yeast if some sort. Had some contaminated syringes from a crap vendor that did exactly what your saying. I guess I just assumed it was yeast as that's the only bacteria that I am aware of that makes alcohol, and that's where I think the fermentation smell comes from. But I may be wrong. On the bright side one out of 14 jars had some mild (half ass colinization about 20%) so I mixed it with Hpoo and fertilized my garden with it. Have been cute little mushrooms popping up around my green onions all summer. Got into agar recently and have tried to clean up the dirty syringes, but out of the 4 I have yet to get any mycelium to actually grow. I did have one contam that looked just like mycelium, I cultured it out and cleaned it up just to find out when it's about 2 inches a cross it turns dark green, but still has a nice white mycelium outer edge. I have no idea what it is, but it's fun to look at through the microscope. (I'm a little scared to open the petri dishes, so it's getting sterilized next time I run the pressure cooker)
