You didn't add a liner or cover the side of the substrate to prevent light from hitting it, light is a pinning trigger

You don't need one if you have the skill to keep your surface proper humidity and moisture content 100% of the time, otherwise pins will form in the most ideal conditions. I prefer liners because it makes it much easier to keep the surface optimal.

I never use a liner and never get side pins. Its all about the surface conditions. Take a look at the SFF shoebox factory tek, the cultivator there shows how to set and forget shoeboxes that always get the perfect surface conditions.

Tamp down the edges of the substrate after spawning so there isn't a like a gap between the wall and the substrate. Also, use a liner that'll cling to the substrate to kind of achieve the same thing.

From the pic it looks like you might have a white garbage bag over the top. If that's the case, then at the sides might be the only place getting good light.
Only repeating what I've read from others: light alone is not a factor in where pins form, surface conditions are the bigger factor. But if conditions are same everywhere and you only have light in one direction then I think the pins are going to form facing the light.
That said I haven't tried using an opaque garbage bag, I used a clear lidded bin. But if I were you I would move the garbage bag up so the light reaches the surface directly and see if that helps next time.

This tub fruited on the sides and bottom really prolifically, and I just floated, flipped, and harvested. You should be good doing the same. If the mushrooms wanna grow absolutely everywhere, who am I to stop them.

Liner make clean up easier. Wont stop side pins if you dont have surface conditions on point tho.

I always pile a little extra casing material around the edges of my trays/tubs/bins and then tamp them down firmly to the same level as the rest of the tray, making sure everything is tamped down as tight as I can get it, methodically going around the edges to ensure consistency in density and thickness.
It's been my experience that loosely or unevenly packed trays of substrates will develop side pins and /or uneven pin sets and flushing.
