King Oysters: Proper Pinning from HWSB?

Hello mushroom friends, hope everyone is having a good weekend. Let me get to the point. Ive spent the last few days reading post after post, searching, watching youtube vids.. etc.. but still CANNOT get a solid answer on the proper way to initiate pinning for KO on HWSB. I have several beautifully colonized blocks that are ready to fruit. I only like to grow enough to eat for myself, my operation is small. So:
1) Do I leave the top of the bag sealed while cold shocking? Do I cut a slit? Cut the whole top off? I see alot of opposing methods.
2) How long of a cold shock? My basement is 60-65* so I know Im gonna need to use my fridge to shock before transferring to the basement to fruit. So how long in the fridge?
I really appreciate the help. Im kinda at the end of my wits cause I feel like Ive got every step up to fruiting nailed down pretty well with this hobby. If anyone has tips or advice for fruiting KO off HWSB please chime in! Thanks for all your time 🍄

1. Leave it sealed till you see the pins inside, for sure. When you get pins, decide what to do after that.
2. I would do 48 hours but see what others say.

Ok cool. Curious about one thing though. Do you ALWAYS wait to see pins before opening the bag? Only reason Im asking is bc this bag had been colonizing for 45 days, the myc was almost at the filter. Any longer and I wouldnt even be able to see in the bag! 😅. I suppose its better practice to shock a block into pinning sooner once its fully colonized rather than later. Thanks for the help man, you've given me lots of good advice over the past week or so 👍.

Whenever possible I wait for pins before exposing to air that dries out the substrate, contaminants, etc.
If you had put this one into fruiting, and waited 45 days, it would probably be super dried out by now (even inside a fruiting chamber) and you'd be lucky if it fruited at all.
Yeah sometimes it can be hard to see thru, but mostly you shouldn't be waiting that long to get it fruiting (unless it's shiitake, then longer).

Hmm wonder what Im doing wrong then. I mean the block was fully colonized at about 30 days. I say fully meaning at the very bottom there was a stubborn patch of sawdust about the size of a sticky note that just wouldnt colonize. Should it even be taking 30 days? Maybe Im not using enough grain spawn when I do my transfers. Ive been using 1/2 qt jar per 5lb block.

Nah the amount of grain spawn doesn't matter too much. Substrate was probably just a bit too wet if parts at the bottom are having trouble.

Update: I cold shocked in the fridge for 24 hours. Nothing much has changed except I have noticed some very whispy growth above the substrate surface in some spots.

Guess Ill keep it in the fridge one more day and see what happens. Not sure what to do if I cant get this damn block to pin. 🤯

I gave the surface a few periodic mists today. If the need arose.. would it be safe to give it a dunk bath? If so how long? Maybe I waited too long and now the block is drying out. Im still a noob so I find it hard to determine whats going on inside the block. The surface did seem a bit dry before misting though..
