White taking over dried mushrooms. Is it mold?

I had a whole batch of beautiful golden mushrooms dried at 165F for 3 hours in a dehydrator (small quantity, one tray). I always clean the ends by brushing to remove any substrate and cutting in clean. However, there is usually some white left over from the mycelium on the substrate.

Today, I looked at mushrooms I had stored in a dry, dark, cool place with desiccant and that white part at the end started going up and taking over a larger part of the mushrooms. They were not all affected by this but many of them were.

What is this all about? Is this white mold or is it mycelium? Is it normal for properly dried mushrooms to turn white over time? Here are pictures as example. Also, if I had some white mold contam on my blocks (which I had on my last ones), and they got to the tip of the mushrooms, will the mold survive the drying process? If not, any way to stop the progression and salvage the mushrooms?

I read that you can eat the mold with the mushrooms and it causes no health concerns but I also want to master the art of producing a dried product that is aesthetically pleasing and fresh looking.

Are they still crispy dry?

I added another picture. This white part is moving up towards the cap after drying. Yes still crispy dry. Let me ask the question another way. If your mushroom tips have some white mycelium on them, does it take over the mushrooms over time making them look white closer and closer to the cap?

On my last batch I had white mold on my cakes and they clearly went on the bottom part of the mushrooms. What do you do in that case? I tried to scrape it off and clean it after thoroughly drying and now they are turning more white...

It looks like mycelium to me, I’d wait for someone more experienced to chime in though.

I can say that I don’t think 3 hours is near enough to be fully dry. Even if it feels like it. I’ve had small batches that I’ve put through the dehydrator for 24 hours, moved into a glass jar with desiccant packets, just to have them slightly bendy a week later. Now I run em for 24 hours, move to glass jar and wait a day, then run another 24 hours. More drying won’t hurt, if anything, it’ll prevent the possibility of mycelium taking off again.

Just my 2cents

Its fuzzy feet. Mycelium growing up the fruit. It doesn't matter how long you dry them it will still have that powdery texture. You can just leave them, scrape them, or cut them off. I would just leave it. If it bothers you too much just hack it off when your harvesting, then use all the ends of make tea or something.
