Who's doing what with seasonal ingredients? 1

Anyone else got any projects in the works with the bounty from your garden or nature? My list:
-Blackberry cyser from wild berries and possibly honey collected by hand if I'm lucky
-brew a pink Wit Bier with beets from the garden
-collect and ID some wierd polypore that's abundant in fall. If non toxic I'll be making mead with it
I'd love to hear what projects everyone's working on.

Picked 9lbs of blackberries on Sunday. Made blackberry cheesecake with a few of them; the rest is waiting in the freezer for further ideas. There'll be some blackberry crumble in our future, that's for sure. Probably some jam as well. Maybe some fresh curd cheese (a Dutch dish called 'hangop', there's no translation for it in English) with blackberry sauce. And whatever else I can think of...
I hope I'll have some time by the end of this month or in September to go out and pick some porcini as well, for pizza, pasta or risotto.

I've never heard of hangop before but just looked it up. Looks amazing I think I'll be trying that one out too. There are blackberries everywhere right now. I'm hoping I can get at least 1 bucket full in the next week or so.

Polypore mead?! That sounds pretty rad. New one on me! Hangop? Man I have to look that up too! Glad I stopped in this forum for those two things alone. Nifty. It's the time of year when I spend six hours or so a day catching and canning salmon, dehydrating mushrooms, and harvesting wild berries for jam. Making crowberry brandy later this week, experimenting with my smokers with different woods on my salmon and moose meat, and trying out new soup mixes with my mushrooms and spices. My favorite project as of recent has probably been playing around with candy cap mushroom infused butter in different baked goods. Burned some salted cookies last night that would have turned out great I think. Will approach again tomorrow. Cool post.

Oh man Moose meat!? You a hunter (I've got a sad lonely little fishing thread in the hunting forum)? I'd love to see some of these recipes! Candy caps are one I've never been lucky enough to hunt for until recently. I'm hoping I find some to play around with this fall too. The polypore is very odd and I have yet to be able to ID from pics alone. This year I will do it right. The aroma coming from the mushroom is intoxicatingly fragrant. I can smell long before I spot it.
