Is it possible that the positive effects of shrooms (such as relief from depression) doesn't occur until days or even a couple weeks after a trip? Has that ever happened to anyone?

Could be. I get it immediately but who's to say how that actually works...

I had some very powerful and enlightening trips while I was in the depths of absolutely crippling depression. Any relief I got from these trips was gone almost immediately, in a few days at the very longest. It wasn't until over a year later when I got out from under the absolute crushing depression through changes in my life situation when I improved to just moderate depression. Then once I was only moderately depressed I was able to look back on those old trips and begin using the knowledge, lessons, and experiences from those trips to then help myself finally escape my depression completely. So for me I don't think there is any time limit that a mushroom trip can help with depression, as long as you can still remember a trip, even if just faintly, it still has the potential to help you. I just had to get away from the horrible situation that was causing the intense depression first before I could really see the beneficial effects of my trips and get relief from the more regular underlying depression.
I think of trips like going to school, even if you don't see the importance of an individual lesson at the time, endeavoring to learn and retain as much as you can is very valuable. You may not be able to use the information right now, you may need to combine this lesson with one you heard five years ago and one you will learn 6 months from now, but committing everything you can to memory in whatever way you can and being able to combine more lessons together and learning when and how to apply those lessons makes you a stronger, better, smarter, and more resilient individual in the long run.

The changes to your perception of the world and/or your psychological state could be so subtle that, immediately after a trip, you don't notice it much (although there is usually an afterglow). These changes can then, over the course of weeks, months and even years, manifest changes in you which will alter the way you interact with life. Thus, a year down the line, you may have put things in your life together to where you couldn't before a trip and, as a consequence, some suffering is relieved in regards to those areas in which you've changed.
I believe that this is one of the interesting ways in which mushrooms can work. I've personally experienced this after my first trip where, years down the line it is still helping me rearrange life in a way which helps me relieve depression, stress and anxiety.

Once I started hitting +4g and started to experience the feeling of no longer being on earth I would describe my first few trips as having a traditional school feeling too.
Then one day I took 6g for the first time. After about 30 minutes after ingestion I was in a classroom. With desks and a board. Something came bursting through the door. Ripped it off the hinges. An entity that looked like it was made of dark smoke came in drunk and belligerent. It grabbed a text book and tossed it behind saying, "we are done with this time to celebrate." I went on a fucking Odyssey right after that. There was still this learning aspect but it was more akin to a close friendship rather than a student teacher vibe. I fought with this thing, literally had each other by the throats at one point. Very valuable to me.
