Losing "cracker dry" in vacuum bags?

I just opened up a vacuum bag (was only sealed a week ago), and the contents were no longer "cracker dry". The caps in particular had softened a bit and had to be torn rather than broken up. Some of the stems still broke cleanly, but some were bendy.
The whole lot was dehydrated in a nesco, at the lowest heat setting, for 24 hours. Came out all crispy crunchy and was immediately vacuum bagged.
I guess a few things could be happening here:
1) The dehydrator is leaving some moisture in the centers, which is redistributing after vacuum sealing. Solution: run the dehydrator for longer.
2) The dehydrator needs to be run on a higher temp to really get the RH down. Solution: run it hotter. (but if this is the case, why do they already come out super dry on the lowest temp?)
3) the vacuum bag is water permeable, enough to soften up dry stuff in there
Anything else that could be the problem? I typically get about 93% weight loss after dehydrating, which seems in the right ballpark. Though I assume it doesn't take much to ruin "cracker dry" status.
Anyone else have thoughts here?

To me there`s only one temperature position: Full blow for 8 hours at 70°C and they`re done. You mustn`t be afraid of the heat beating potency, it won`t harm. Vacuum bags in a container into the freezer. Try some desiccant in the container.

Dehydrate on highest setting for 24hours If you're unsure of your vacuum sealer/bags, use mason jars for storage. I always tape a silica gel packet/desiccant pack to the underside of the lid, probably unnecessary but it helps me sleep at night.

Yeah they weren't completely dry and you sealed them in a bag, thus redistributing moisture. You need to dry them longer until ALL the moisture is going.

They probably weren't 100% dry when you loaded them in the vac sealer. Try a higher heat setting on your dehydrator.

Sometimes they seem cracker dry but there not. Like others have said 24hrs at high heat is best. I like to throw a desiccant pack I’m the bottom of the bag also but if your vacuum sealing them it’s probably not necessary.

I seriously doubt u will lose potency. Its mostly just going stale, a small amount of moisture. But i guess it depends on how "unfinished" the shrooms were during drying.

You may also slice the bigger ones up in length before putting them in the dehydrator to get even drying. Usually, if the stems aren`t hollow, and they don`t bend over, they`re good for me.
