Do Oysters often last.....

Do Oysters often last well enough to sell 2 or even 3 days in a row at a Farmers Market if not sold the 1st day? Or does the heat usually beat them up too much for a 2nd or third day at top dollar price? How does everyone handle that?

I did over night. Picked some more the next morning to add to what was left from the day before and mixed them up on the table. I figured there was the best way to find out. Ask the customers. be honest to the customer that they were all picked fresh for this weekend market.. Some were picked today.. some were picked the day before.. And I even had customers pick the ones that were from the day before after they even noted that others looked like they were picked that day. Every one said they look AWESOME.. even the ones that didn't buy. Yay me.
