Cajun Chicken BBQ Bitches!

So I'm looking for a good dry rub chicken BBQ recipe for my wife's parents who will be visiting this weekend. I tend to lean toward lemon chicken but her folks live in Louisiana and I'm trying to impress:) Any of you Southerner suggestions would be greatly appreciated as my Pacific NorthWest ass has no clue 🙂 I'm great at cooking but would like to make it special. So far I'm just doing chicken and alligator but I'm open to other meats if I can get my hands on it.

Can't do a Cajun BBQ without crawdads. But it's not like you need to cook Cajun stuff to impress people from Louisiana.

Yep. If they're from, born and raised in Louisiana then it's probably gonna be tough to impress them with Cajun food. I'm sure they've eaten and seen it all at this point.

Dam bbq chicken. You can just use some good simple bbq seasoning and coat whatever chicken you have in a bowl and let it sit for a day in the fridge. I like to add ground garlic, paprika, a hint of cajun, black pepper, cayanne. Some light sea or kosher salt. All dry ingredients. Chicken must rinsed and dry as you can before dumping seasoning in. Be generous and mix.
Its all in the prep and the seasoning soaks in. Bake as you please, I like 425 for 35-40 mins. Then use a bbq sauce (room temp) that you have or made and slather on top for a broil for 3 mins.

If you don’t have a clue then your best doing something you do have a clue about.
To summarize, it’s really hard to impress people by doing things you don’t truly understand.
