Short probe thermometer for bulk pasteurization?

I like to pasteurize bulk subs in a PC with the lid on, which presses the probe way deep in to the jar. This is annoying for measuring core temps inside the jars. So my odd question is, does anyone know of a digital probe thermometer with a really short probe that will only reach in to the center of a quart jar? Or have another solution that will work just as well? Thanks gang.

i use a digital bbq thermometer. The kind with probes on a cable. That goes to a battery powered unit that's bluetooth to my phone. I run a tube off my pressure cooker to a larger tote thats my bulk steamer. Then I just load up my bags, one has the probe in it.

Yes but then I'd have to build a steamer when I was really just hoping to find a shorter probe lol.

No you don't. It works exactly the same. I was just describing how I use mine. You can use it however you like. I don't know about with the lid on unless you use modified lid. But whats the point of putting the lid on? You can just put lids on quart jars. Just drill a hole in the center of one of the lids that you can stick the probe into.

Yes yes that is what I do. My AA is not tall enough to not press the probe way in to the jar when I put the lid on it you see. Seems my options are: get a taller PC.
The point of using a lid is to trap steam inside the PC so the entire thing heats up evenly, like we do when PCing, except without actually using pressure. It's less of a pain in the ass than submerging jars and weighing them down.. as long as I don't have to fiddle with a thermometer the entire time that is.

That or tilt a jar against the wall of something. It would take up way more space though.

Yeah and I run my PC full when I pasteurize usually so there's no room for tilting. Hmm..

Idk how the probes work but if they’re just metal you could saw it in half.
It seems like even going all the way through it should still give you a good average though. I do the same thing and took the lid off and put the probe in a few spots to check it out and it was all the same.
