One overgrown cube in a group.. harvest or let it ride?

Hi,
First time grower. The TL;DR is that I bought a monotub grow kit and while its chugging away i'm setting myself up to do agar. I am very inexperienced and I am unsure of what to do with this one big guy that is growing much faster than the rest!
This was last night/early this morning:

and now today (maybe 16 hours later) it is pushing against the lid:

When the veil begins to break should I harvest that guy and that guy alone? If that is the case should I just cut the cap off or should I cut the stem as low as I can get it without damaging the surrounding growth? Should I wait for the few around it to catch up?
Thanks for the help!

I would say let them go as long as you can until the veil starts to break then take prints for agar

Yeah that is part of my plan. I had five syringes of spores (paid for 4 ) delivered to me today and i'm going to clean and isolate them using agar. I'm going to do the same for that big boy using his spore print but my main question is still unanswered. What is the best way to go about harvesting it?

You can take some scissors and cut close to the bottom without hurting any around it.

Just cut the cap off so it doesn’t drop spores but doesn’t disturb the little ones.

I decided to cut the entire stem relatively close to the growth of the other mushrooms. I purchased a dehydrator to help me in my endeavors and I figured that now would be a good time to test it and see how it performs! I did however take a sample for cloning and I am also taking spore prints now.
Thanks for the input everyone! You're the best.
