Brf cake smells sour

After my first flush on BRF cakes they were dunked for 24 hrs in distilled water and returned to sgfc. After 10hrs there is bruising on the cakes and a sour smell that is aerating from the cakes. I did not rinse them under running water before I placed them back into the sgfc until I noticed the sour smell. It dissipated slightly but not all together. Any thoughts?

I wouldn't worry, dont think it's anything detrimental to your cakes.
If it turns out that you're annoyed by the smell then rinse them, don't re-roll them in vermiculite as this might create an excellent micro-climate for bacterial growth.
Otherwise just let them be, im guessing the smell will dissipate almost completely by tomorrow.

Dunking in distilled water is also not necessary as they will be fine in normal water as long as its drinkable to you.

A fully colonised cake should smell of mycelium. Any kind of vinegary smell sounds bacterial.

They did get rinsed and the smell dissipated by maybe half and was wondering why you think I shouldn't be concerned with a possible bacterial infection?

Any sour/fermentation smell like that indicates a bacterial infection. They are harder to see since they often don't change the colour of the substrate.
I'd recommend tossing the cakes if the smell is very obvious. If not you could give it some time and see if the smell goes away or gets more intense. Bacteria will breed and spread endospores around your house so it is a good idea to get rid of it early if possible.

Most bacteria can't change to endoscope form so I'm thinking the exterior quarter inch of the cake can be excised like a tumor and the interior cake composed of healthy mycelium can be rolled in verm for a fresh start.

Cakes can always be rolled in verm at every stage, it doesn't affect their performance for the worse in fact it might just increase the chances for a preferable micro climate if new, healthy myc is let to regenerate from the dried and matted myc that occurs from undesirable evaporation rates. Safest option is always to post pics so that experienced eyes can tell you right away if you're on a route to failure or not, every hours matters when it comes to BRF cakes in unfriendly environments.

So Im going to just give it some more time. After checking in the afternoon the bruising has almost completely dissipated and the souf smell is barely noticeable. Maybe the rinse really did help.

If you don't notice fruit formation a week after fruiting then IME more likely than not your environment is off or way off. Just post pics of the fruiting cakes if you're not 100% sure that you've created and are maintaining a desirable environment/micro climate on the substrates (which you're not 100% sure of) lol.  Cakes can go for weeks and weeks without producing when inside poor environment, then the second the preferable micro climate finds its way to the cakes surface and they suddenly explode with pins all over the cakes surface.
