grain texture

AFOAF is using this ratio for 1qt jars: 250ml rye, 210ml h20, 1g gypsum. Pressure cooks at 15psi for 1hr then lets it cool until pressure goes down. When they open to shake, the grain is goopy and shitty. Its also not 2/3rd the volume of the jar, more like 1/3rd at best.
Also worth noting, the grain was rinsed and soaked for 16hrs before pressure cooking.
Is this ratio off? Are they doing something else wrong?

this is covered in the FAQ there is no need to add anymore liquid after soaking.... the additional watter is the cause... simple soak, rinse, drain for 30-60 minutes and pack... you should pack to the 2/3 mark and from there it may puff a it more... to much water is again the problem

Just try this believe me just try it. Simmer the rye for 40 to 45 min then load it into the jars to the level that you want. Then PC at 15psi for 1 hr without adding any water to it. Other then having it turn out perfect let us know what happens.

Same problem, seems to be loss of moisture. Here's exactly how it was done:
* Rinsed grain, then soaked for exactly 24hr. * Drained grain, then rinsed again. Let grain drain for 45min. * Filled 1qt jars 2/3rd full, added pinch of gypsum. Put on tops, incuding polyfill through dime sized holes, with lids inverted and bands semi loose. * Pressure cooked 1hr, 15psi. * Right after pressure dropped, jars were shaken. * Jars sat overnight to cool. * Innoculated through small hole in lid that was covered w/tape. 1cc per jar, then re-taped.
Temp. was watched, it stayed between 70-80F. Jars were kept in darkness. So what the hell is the problem? After 2 weeks of no colinization, the jars were quickly (non thoroughly) inspected and the grain appeared dry. Now, after 1 month, upon closer inspection the grain definately looks dry.
Lastly, the spores should be good - they came from a reputable vendor and were handled properly.

Simmer the grain-It makes a big difference! I used MAGASH's tek and believe me it works great!

The only real difference is simmering after the soak. But this may make all the difference, so it's worth a try. I've always heard of the grain being either soaked or simmered, not both.

Curious to know why if you where using poly-fill, did you put the lids on inverted and loose? Put them on the right way so they seal, and tighten them up. Perhaps you are losing too much moisture this way. And IMO, dime sized holes are too big.
I take my rye berries and soak for a solid 24+ hours. I know when they are ready when they squish between my fingers with ease.

Inverted and loose because the rubber edges tend to seal themselves onto the jars after being pressure cooked otherwise. By "loose" I mean just barely, and for the same reason, the bands get stuck onto the jars sometimes so it's easier this way. This is a hassle to mess with when trying to be sterile (air sucking into the jar, etc.).
I agree that dime sized holes seemed too excessive, but the FAQ as well as knowledgeable members have said this is a good size (dime size or 1/4", basically the same).

a dime is about a half inch though, not a 1/4 inch...you also say you have it between 70, and 80 degrees. If you can keep them around 85 degrees it should speed up colonization for ya.
