My go-to for an inexpensive but nutritious meal is a pack of minced beef, steamed broccoli and rice. Cook the minced meat on the frying pan, season and then later add the broccoli. Soy sauce goes well with the broccoli and beef. Lots of protein, decent amount of fiber and vitamins from the broccoli (so I think) and the rice is just energy. Minced meat on its own well seasoned is great. Just gotta try to keep it in nice chunks.

Red beans and rice! Dried beans and peas in general are great, split-pea soup is top tier. Rice is cheap and easy carb filling, especially with some type of rice cooker. Buy cheese by the biggest block and freeze huge chunks you won't use immediately, avoid pre-sliced and shredded stuff as it really tends to run up your grocery bill.
When I know I will be too busy to eat during the day I like to make a really fat omelette for breakfast, sort of french style, and it tends to last me for a while. I do sometimes want to crash after a fat, cheesy omelette though.
Peppers, hella peppers. Spicy ones aren't required but they compliment lots of other foods and tend to be a healthy addition to a meal. Fresh ones are usually cheap.
Protein shakes can be cheap when you buy the big tubs from GNC or wherever. They will never be as good as a real milkshake but they get better every year.

Do ya'll eat eggs? That's my favorite cheap and tasty protein to add to so many things. Here are some easy recipes with vegan alternatives:
- Fry leftover rice with eggs, veggies and soy sauce to for quick fried rice (sub edamame or tofu for eggs if Vegan)
- Huevos ranchos - fill a pot with a jar or a 1-2 cups salsa, simmer salsa and poach eggs in cooking liquid until your desired done-ness, serve on top of fried tortillas (sub beans for eggs if Vegan)
- Ramen noodles with eggs poached in the water as it cooks, add veggies to your liking (I esp. love spinach and green peas), you can sub edamame or tofu for eggs if Vegan
- Veggie taquitos - make a mix of corn, black beans, salsa, other Mexicali ingredients, roll into tortillas and bake around 350 until slightly browned. You may wish to brush the outside of the tortillas after rolled with olive oil to keep tortillas from drying out or sticking to your baking sheet. (You can also add meat to this if you have leftovers and aren't vegetarian)

Cajun food is cheap and easy. Try some Red Beans and Rice, serve with cornbread. I add sausage to mine, you could go without or use a meat substitute. Jambalaya is good, cheap, and easy too.

Just made some buttery chicken curry and rice at the cost of cheap spices and things I keep on deck for general cooking, 6 bucks for 4 boneless chicken thighs, and rice is cheap in most places I imagine.
I should be able to eat the leftovers for at least 3 days. For one person, my recipe is a little bit extra just in case my body decides it needs to be extra hungry, but I doubt I will eat it all.
It's pretty good, I do it with a programmable pressure cooker which saves just as much on meals as a crockpot with more range of what you can cook with it and how.

Oh! I just was thinking of this thread and wondering if OP has tried "chicken of the woods" mushrooms? I just started learning about them this year and I'm eager to try, but I understand they make a great chicken substitute in stir fries, sammiches, soups, etc., along with having a hilarious name.
Could be worth checking out?

Lentils, beans, rice, potatoes. Get tomato paste and coconut cream/milk + produce. Make some different currys/asian dishes (Indian dal is a good one with lentils or Thai Curries). Throw over rice or potatoes.
Pick up some tofu as well and throw that in, also dry soy can be used like ground beef, and is very cheap.

Human meat can be surprisingly cheap. Learn your cuts though. Please eat sparingly. It contains enzymes that will drive you mad if you do it too often. But like twice a year? Delicious.
