Meals to make to save money cooking at home?

My girlfriend is a hardcore vegetarian, which I am moving towards being myself. As of right now, I’m curious what some meals to make to save money would be? I have general ideas, but wanted to get some suggestions from my people here... thanks.

Cooked rice, couple jars of green beans, chopped up omelette, sambal for flavoring
Prepare a huge pot once week and freeze portions. Basically a dollar a meal food

I lived on those throughout my university years

On Sundays or Monday's I prepare huge portions of fresh hummus, black bean burger mix, and tofu - a weeks (sometimes 2) worth for two people.  Anything extra/leftover can be frozen and keeps well for months.  Those plus grilled & tempura’d veggies & sticky brown rice & eggs & fungi & fruit & pickled veggies are my go to’s.

All relatively easy, inexpensive, and delicious to make!  Btw, how are you feeling bud?

Well I'm not sure what to add but DO NOT use white truffle shavings on top of your dishes if you're trying to save money. Trust me it's a bad idea.

Thanks guys I’m going to look back at this post when planning my meals for sure.

Dude, I’m so much better. I’ve never been through something like that before. Opiate withdrawal was awful, but this was traumatizing at points. I have a new outlook on life, I’m so happy to be able to sit at home after work and enjoy watching TV. It’s simply amazing to feel baseline, I got off work yesterday and felt euphoric just being at home looking at my house. I will never touch gaba drugs like that again, huge wake up call. I feel blessed. I’m not 100%, people were telling me you’ll wake up one day and feel way better, and I did. Thank you for asking. So happy.

You can make a pretty good lentil veggie salad that tastes good cold or warm. Just sauteed up some basic veggies like carrots, celery, onions and garlic and add to cooked lentils with some apple cider vinegar and olive oil. If you want to get fancy you can add herbs and spices. I also add chopped apple which makes it sweet but still healthy. Lentils are cheap and the other veggies you can buy a bunch at a time and keep in the crisper drawer for a while.

back in march Asante convinced me to panic buy food (and I beat everyone else panic buying food by 1 week in my town, I didnt have slim pickings) I got 16kg rice and 16kg great northen beans and 30 cans of vegetables, I figured it would last me about 60 days, making rice, beans and half a can of veggies per meal, I bought a bunch of sauces aswell, in hindsight I should have bought less beans, I use less beans then rice per meal

it was cheap as fuck, but the stores never really ran out of food so I never really started even eating till a few weeks ago, and it taste alright but I cant bring myself to eat it more then once per week

and beans you have to either let soak or pressure cook from dry, so I put them into my instant pot dry with a lot of water and pressure cook for 30 minutes and let it naturaly release for 30 minutes, so they take about an hour to cook, I also found out my dog likes eating them, I was picking them out of the rice and feeding them to my dog, I gave her atleast like 10, I think they are kinda creamy, at least a bit better then I thought they would be

Lol I panic bought like most and now I'm trying to methodically eat everything so I don't end up throwing a bunch of expired food away. I still got a pretty long way to go too.

I told myself I'm not panic buying again. No more covid stash. If shit really hit the fan, and the stores were empty (for good) and we were thrust into an apocalyptic world -- well a month or two of food wouldn't save me. I mean yeah it would delay the inevitable, but whatever. As soon as my month or whatever stash was gone I'd be a goner. And I'm not dumping my savings into a 5 year stash of canned beans and rice and an underground bunker :lol:

So if we reach that point then I guess I'm waving the white flag

One of the cheapest meals on the planet also happens to be one of my most favorite: grilled cheese and tomato soup :thumbup:

Peanut Butter and Jelly Sandwiches

Ham and cheese sandwiches

Tuna fish sandwiches

Top ramen with your favorite veggies thrown in.
