Shoeboxes stalled

I started 3 shoeboxes using the Sterlite 1642 with a 5lb North Spore Boomer bag divided amongst the 3 on 6/28. I shredded 6 x 1/2 pint jars of Amazonian amongst them using the largest holes on the cheese grater. Also shredded 3 x 1/2 pint jars in coir/vermiculite in a 15qt bin using a 1/3 volume of the bucket TEK recipe (250g coir brick). Small white puffs grew the first day or two but they seem to have stalled. I am keeping them at 75-80 deg in ambient light. I was not keeping them in another tub. There is some condensation on the sides of the boxes but it's not super wet in there. I have not been opening the boxes, I have misted a few times. Any ideas?

How long ago did you spawn?
Can you get the temp down to around 72?

On the 28th of June. Yes, I could get the temp down if needed. I thought 75-80 was the best temperature range. Is ambient light ok or should I try dark? Should I put them in a tub to restrict airflow?

I've never had a problem with ambient lighting, they were almost direct natural lighting in Florida even... but keeping airflow consistent and humidity up seemed to be the key to success in those conditions.
EDIT: By airflow consistent, I mean consistent airflow while keeping the moisture up in the substrate at the least.

Looks okay to me ,leave the lid on and let it do it's thing... post another pic in a couple of days so we can see how she looks

Everytime I've left the lid on without airflow/FAE I always get long stems. Is it genetic or something else?

lol... I meant leave the lid on while the myc runs through your substrate, then when it's around 80% colonised you can crack the lid and dial in your humidity, FAE and surface conditions, practice makes perfect...well almost, that's the great thing about this, so much to learn and play, get a few boxes going and make slight adjustments or follow a tek to the T 
I'm new to the forums but have spent the last few years learning and adjusting my grows an experiments.. Love it an won't stop learning and helping if I can

OK so I put the shoeboxes in an opaque tub for the last few days and they seem to be doing better. However, there is now an aphid fly or fruit fly problem in one of them that I discovered this morning. I isolated that box in another tub and put aphid fly sticky traps in all large tubs holding the boxes and in the room. I don't know how they got in there in a tub and a shoebox. Is there anything you can spray on the substrate to kill the flies?
