Help with BRF to BULK

Hey my fellow Myconerds! I hope everyone is staying safe. I need some insite. Let me start from the beginning. I started out with 3 - 4 fully colonized BRF cakes, i decided to try my luck with BRF cakes to bulk (6qt shoe box tek). I used the usual recipe of 4 cakes, about 325 grams of coco coir, 1 qt of verm and 2qts of boiling water. Mixed it all up. Cheese grated that cakes and mixed thoroughly. Black tape around the bottom of the shoebox. Filled to first line, made even and threw the lid on. 10-11 days later i had great mycelium growth. Im not so sure what exactly to do next. How often do i mist, fae? My first boxes produced fruits but mostly from the sides that pulled away from the plastic. I have a bakers rack wrapped in a tarp to make a sort grow chamber.
1) why does the mass pull away from the sides and that where most of the pins are. 2) i seem to get very few if any fruits growing from the center of the shoebox “mass”
I put a small humidifier inside because im thinking maybe they are drying out which is why i dont have any holes for FAE. The top is just raised a bit.
What am i missing? Any advice would be greatly appreciated. Here are some pics i took yesterday and today.

You need to watch your surface conditions and mist so that tiny beads of water can be seen on the surface. FAE should be adjusted as needed. If the water isn't evaporating, increase FAE. If drying out, mist.

It shrinks as it consumes available nutrients/water in the substrate. Pins will grow where conditions are best. This is why people usually use a liner (I don't and I get that problem as well).

Evaporation is a pinning trigger. Make sure your surface has those tiny beads of water and it is evaporating.

Generally, cracking the lid should be enough to get adequate FAE. But you need to adjust based on your set-up and environment.

There’s not much to do next really. You make the shoe box, let it colonize in the same conditions as ‘fruiting’ and wait for mushrooms 🍄. If it gets dry looking you mist but your recipe seems pretty water heavy so it should’ve been fine.
I see you’ve got some other kind of setup going on though. Monos and shoe boxes are meant to be self contained deals, for SB’s you just leave the lid on, maybe cracked a little bit depending on what brand and mist only if it looks dry.
