Is it necessary to dunk and roll after taking the cake out of the jar?

Necessary, no. Advised, yes. The dunk re hydrates your cake, and the roll in verm acts kind of like a casing layer to hold the moisture in and helps induce pinning. For the time and effort it takes it is well worth it.

So should i use fine or medium sized vermiculite? Im guessing the more fine grain vermiculite.

Fine grade for the verm barrier and if you’re going to use the roll for sure.. but I use to use medium grade in the cake recipe and it worked great.

I didn’t roll for most of my cake days.  I just used a fine verm double ended casing.. it’s just a small handful of wet verm in the top and bottom of the cake.



Makes it easy to get water to the cakes if they need it.. just add some water to the top verm casing layer and the cake will soak it up via gravity.

It's not necessary but every bit of moisture they can get counts. Maybe you don't like the mess of the verm, that's ok too.
