Any wisdom would be much appreciated (Attempting Damion's Coir Tek)

Currently I have one monotub in fruiting (too early as it turns out) and two others still with the holes covered and in black garbage bags.
Step 14 of Damion's Coir Tek says "After the 10 days you need to check on the tub if it is 100% colonized then you need to put it into fruiting. I do this by taking off the duct tape and stuffing the holes with polyfill, then introduce light and FAE."
For some readon I took that as "Put it into fruiting after 10 days..PERIOD." It was nowhere near 100% colonized but I still uncovered the holes, stuffed the top ones loose w polly and the bottom ones tight, added light and put a fan near by (tub is in a closet fyi).
Now I have been trying to dial in the FAE based on how the condensation looks for almost 3 days now. I didn't have any information saved on how to dial in the FAE so I came on here to read up on that and just now realized that I should have left it to colonize longer. Can I recover from this or are there any measures I should take? Should I remove the light and FAE and bag it or is it too late to unring that bell?
Here is what it looks like right now:

Second question is for the other two tubs. I have to go away for work in early August unexpectedly. Will they be ok if I leave them covered and colonizing for a month longer than expected?

Take some pictures with the lid open, it's impossible to tell what's going on with those pics.
Condensation level is not a good way to judge conditions since it's primarily caused by temperature difference between the air inside and outside the tub. It's only useful for, if anything, a relative gauge of how much tighter/looser you have packed the poly as you dial in.

Also, no don't leave them colonizing from now until the end of August. Put them into fruiting conditions now and you'll likely get a full first flush before the start of August, and possibly the beginning of a second.
If you leave it for a month, you may come back to very spore-blackened and possibly beginning-to-rot mushrooms.

Also just put a digital hygrometer in the tub as well to get a humidity reading.

I’ve never once used a hygrometer. They generally don’t work correctly and mislead new people. Learn to read the surface of the substrate and don’t worry about what some gadget says.

I left the closet door open last night and with a/c on low. Room temp stayed at 74 degrees, much less condensation on the walls but the substrate seems moist and I see more mycelium this morning than I did last night.

I harvested the first tub and have been air drying them with a fan for a few days while waiting for my dehydrator to arrive. They are dry to the touch but not brittle. Would you consider putting the mostly dried shrooms in the dehydrator or should they be fresh for that (NESCO FD-37 dehydrator BTW)? I also have Silica Gel Drying Canisters that I can use for now as well. Thanks.

Definitely put the mostly dry mushrooms in your dehydrator upon arrival, until they are properly cracker dry. Nice flush man.
