Please take a look at my rye jars, are they ok or too dry?

I practiced soaking and PCing rye jars to dial in good moisture. I have seen so many bacterial/too wet jars on this site so before my first inoculation I wanted to get it right. It is better after some runs with blown/mushy grains and water pooling in jars but isn't it too dry now?
One on the left pure rye. One on the right with added gypsum during soak. 24h soak and then about 10 minutes of simmering.

Hey dude, if you have soaked them for 24h and then PCd them for at least 90 minutes at 15 psi, you're golden. Those grains hold water inside of them too. You can just squeeze them and you would find they are mushy. Myc will eat those just fine. Plus, its better to be a little on the dry side than on the wet side.

Yes, 24h soak, 10 minutes simmer on low, then 90 minutes of PC at exactly 15psi. I wanted to make sure because my previous few runs had little pools of water where grain touches glass or too many mushy blown grains and now they don't look as shiny and plump.

they look damn good! See how they're puffy on the verge of bursting but didn't burst? They look ideal!

yes no need for the simmer if soaked 24h imo too

Thanks, I will try to avoid simmer with my next batch tomorrow. How do I load jars after soak? Just strain grain a bit or dry until dry outside?

Ime I would always simmer if not just for the steam evaporation that helps the grains dry.
