I've been playing around lately trying to create a recipe that i love. To do this i've had to try a few recipes too, to work out what works.
I've tried a KFC replica recipe I've tried Snoop Dogg's potato chip chicken I've tried a mixture of the above two with a mineral-water/egg/flour dredge.
The last recipe which i created from my previous experiences i think was the best but of all the recipes i've found them pretty lacking in flavour and very salty. None of these recipes use MSG. I haven't cooked with MSG yet so i'm not aware of the difference it can make.
Crunchy skin/batter i don't think is too hard to obtain. I'm looking for flavour. Was wondering if anyone has any great battered fried chicken recipes they love?

Auto's Southern Fried Chicken (I am from Alabama and have lived in the South most of my life) Breading: 20 parts flour 2 1/2 parts paprika. 2 parts salt. 2 parts garlic powder. 1 parts black pepper. 1 parts onion powder. 1 parts cayenne pepper. 1 parts dried leaf oregano. 1 parts dried thyme.
Put the chicken in a gallon ziplock bag, fill with buttermilk, and let soak in the fridge overnight. The next day, mix up your breading mix and go a piece of a time from the buttermilk > breading mix > 350F peanut oil. Keep the thermometer in the pot and don't let it get below 325F. If it gets close, stop adding chicken. If you put the breaded chicken into oil that is cooler than 325F, it'll end up too oily. Cook 6m each side and then start stabbing it with your meat thermometer. When it reaches 165F, pull it out and set it on a cooling rack.
This will be the best fried chicken you've ever had. Then you can start tweaking the breading recipe to your tastes once you get it right a few times.

I like to use lard. But peanut oil is 2nd best.
I mix buttermilk and Louisiana hot sauce 50/50 for the soak usually
And a little corn starch mixed into the flour like 10%
