More Morels

I found these last weekend, over in Idaho. It was a beautiful place, you could see the Bitterroot Mountains in Montana. There were many, many more, but I was feeling like I should leave some to spew their spew. . .











While still at their peak of freshness, I sauteed every last one of them up in some butter. Then I froze the sautee in small portions in ziplock baggies. I've done this before, and it really does seal in the fresh morel flavor for eons to come.

damn nice haul dude :laugh: , sounds like you really got into em, picking burnsites or what?

ever try drying them?  I did that with a few of the esculenta I found a while back, still haven't rehydrated em to try, but I've heard it works pretty well...

I have tried drying them, and it works pretty well;  The key [IMO] is rehydrate in a minimal amount of water, and use any exess water in the cooking.  Thawing out frozen butter slurry eliminates this step, and most of my recipes welcome butter anyway :wink: 
It really wasn't a burn site;  There were a few campfires around, but the morels were not particular.  They do seem to like areas on the other side of 'NO TRESPASSING' signs :laugh:

I've only eaten one meal off these, and it went something like this;

Morels sauteed until done in a minimal amount of butter. . .some half and half added to this; just enough to make a nice sauce. . .simmer easily, stirring, watching the cream turn a stroganoff-brown color. . .some fresh cracked pepper. . .a touch of salt. . .toss in some fresh tortellini. . . .you can't screw up fresh morels :smile:
