should I birth early if im having excessive moisture and mushy spots? what yall think?

I inoculated on the sixth of june. These two are the fastest to colonize they appear to be about 90% colonized over the surface. I noticed the moisture content rose dramatically the last few days. I had this problem in the beginning but realized it was due to the temperature change in the room and was able to fix the issue. I dont know what the excess moisture is caused by now but i found a golden teacher jar that had some green mold contams in it. I took the jar out but still am worried about the the others as they look a bit mushy. what should i do? birth early or leave them to colonize a bit more?

Are those jars completely seasoned sealed?

I have not opened them completely but have loosened the lids to allow excess condensation to escape.
