2 'south american' shoeboxes look ok?

Here's a picture I just took of my 2 'south american' shoeboxes, and I'm kind of excited! The one on the left (blue) was started on the 19th. The one on the right (pink) was started on the 21st, and the myc in both is very rhizomorphic. I have no clue why the older one is lagging behind the other. Everything is identical except that the older one has a thicker substrate ~4.5", and the other is ~3", but the spawn:sub ratio is about the same, and they're side-by-side on the incubation shelf. Any ideas? Because they were both producing a lot of condensation, I removed the inner lid on both, and have them slightly tilted so the moisture drips to the side, and not directly onto the sub. Temp is a constant 83°, and they get fanned at least 4X/day. When should I start daily misting? I'd appreciate comments, suggestions on how to proceed. Thanks!

Guys--am I doing this right by fanning at this point, or should the fae be limited until ready to fruit? They're sweating like crazy. I need advice here! Thx.

No directly fanning at this stage, even not later on. With fanning you may dry out the surface, while condensation still runs to the bottom. You can see in the picture, the right is a bit more saturated. With a tilted lit, you should get to a first flush without doing anything. Some guys even tilt the lid for 180°. A thicker substrate needs more time to colonize, so it may be behind. Nothing to worry. Condensation is good, just look out for pooling water, and 83° is a number.

They look fine so far. Just close the lids and leave them alone. Fanning isnt needed.

Thanks, guys! I stopped fanning them, and took a picture to show 24 hour's growth, as of just now. I'm psyched! Stay chubby!

Imho nice progress for 1 more day, 48 hour span here. At what point do you know they 'look done', and have started consolidation for a few days? It's starting to look a little wet on the surface in spite of slightly tilted boxes. Thanks

One of the shoeboxes started to get trych, and is buried out by the compost pile. The other was started on 6'21, and looked fine up until right now. Now there's a lot more metabolites on the surface, and still no sign of pins. Wtf am I doing wrong with these? My brf's do great, shoeboxes bomb. I might as well stick to the brf's....
