Oyster on cardboard substrate questions

Hey all,
This is my first time attempting to grow oysters from scratch on cardboard. This is where I'm at:
- Bought an Oyster grow kit
- took some of the mycelium from the kit and put it on agar
- transferred the agar to sterilized popcorn
- filled two grow bags with field capacity cardboard (mostly from boxes)
- sprinkled in a quart of the grain spawn into each grow bag
- the bags have been colonizing for 16 days
Day 3

Day 16

My plan from here is to let them keep colonizing for up to about 4 weeks to make sure it is fully colonized. Both bags are fully white and feel stiff, so I think it's definitely getting there.
Once they are colonized, then what do I do? Just slice the plastic for oxygen and mist? Any thoughts appreciated!

My egg-boxes colonization usually takes 2 weeks, you don't have to wait 4 weeks, they are ready. Put them into fruiting conditions, make them grow from the side(s), not from top.

Not shiitake, kings almost certainly, although they won't want to fruit out the holes you cut like that.

Shiitake - take them from bag when brown. Kings - cut whole bag couple cm above substrate. Oysters and lions - cut X or slice only at the bottom of the bag and turn it.
