Warm-weather gourmet mushrooms?

I'm trying to get into Gourmet mushrooms, had some success with King Oysters, but I frankly dont like the taste that much of all Oysters, and now wanted to try Shiitake next. I love button mushrooms, but dont wanna fuck with compost just yet, something easier first.
But now I'm reading shiitake require cold shock to fruit and frankly I dont have the money to buy an exra fridge and my current fridge situation is that its full with groceries (its quite small) and no space left. But honestly, I was going to do a log grow anyway and these dont get put into the fridge, I mean isnt fall itself cold shock enough?
So anyway, any ideas for a Gourmet Mushroom that is not very advanced and is warm weather loving, to have something else to eat, mushroom wise, for the summer months too?

I know a shop that sells Shiitake breeds that grow and fruit under higher temperatures. Is it allowed to post links to shops in this forum?
Maybe a bit silly, but what about letting your freezer get empty until you can cold dunk the Shiitake over night and then go grocery shopping the next day?
Agaricus subrufescens is supposed to grow well under high temperatures but cultivation is supposed to not be easy. I haven't tried it yet.

Earth angle mushrooms on youtube. TR Davis claims no cold shock needed. Just to clean off the 1st layer of brown with a water hose. Check him out.
Just remember that shiitake takes at least 3 months and because of the long incubation you need more incubation space.
