I'm totally new at growing. I birthed my jars today and 1 jar looks like this on bottom of cake. What is this?

Looks to be uncolonized substrate, with some yellow metabolites around the area. I would scrape that off and see if it will fruit.

It appears to be an uncolonized part of the substrate. Could be environmental like too wet/dense substrate in that area or that part could be bacterial. I just scoop that part out with a tea spoon until I am well into the colonized part of the sub. Meaning get rid of all of the uncolonized parts, don't leave any on the cake if you decide to fruit it. I have one cake that looks like a dounut and from experience I expect it to fruit more or less like any normal cake. Gl

As the other guys mentioned, its probably uncolonized cake. Perhaps it stalled out on that one part. Cut it out using a steak knife then fruit.

Also wondering why your cake is all wet. Im guessing u rinsed it off or just dunked but gotta ask anyway since yer brand new to growing.
