Black Garlic 3

Have you guys ever tried black garlic? This stuff is soooooo tasty. 
It's got like an umami, balsamic, molasses, smokey, sweet, garlicy (but without any bite) flavor. The texture is really soft with just the slightest chew. You can cut into a clove, but it's easier to spread or mash up.
"Black garlic is a type of aged garlic whose browning is attributable to Maillard reaction. Bulbs are kept in a humidity-controlled environment from 80 to 90%, at temperatures that range from 140 to 190 °F for 15 to 90 days."
Most recipes I found use a rice cooker, sous vide, slow cooker or a specialized garlic cooker. I made it in the dehydrator. (A device many shroomerites have running around the clock already. ) Unpeeled heads of fresh garlic in a vac-seal bag (to hold in moisture) in the dehydrator for 21 days at 160F.

Roasting bulbs of garlic can come out similar to that any also quite near your flavour description.
Black garlic matters.
No matter what you roast in the oven, there's always room for an onion or two and a bulb of garlic as they are always ripe for the roasting.

I've been wantin' to try the black garlic, but haven't been motivated enough to prepare it...and I don't like the idea of buying it bagged at the grocery store.
I've had some garlic cloves in a jar of honey for almost a year now, and it's gotten pretty interesting. I use the honey in all kinds of dishes, and the garlic is good chopped up in a salad, too.

It's like roasted garlic times 1,000. The process is essentially roasting at a very low temp for a very long time.
Yeah, garlic fermented in honey is awesome. That stuff starts developing some crazy flavors after like 8-10 months.

I had a stupid black garlic burger once at a little burger cook off thing that was going on at the boardwalk once. It was fantastic. Exquisite mouth feel.
