What is going on with my pressure cooker

So I PC’d some grain jars and a few sterile water jars yesterday. 2 hrs at around 16psi by the gauge. I use 3 quarts of water per the manual and cook on a small gas burner in my travel trailer. I noticed with about 20 min to go that the aggressiveness of the jiggle weight slowed, I immediately  though I might be running out of gas but that wasn’t the case. Although it slowed, I never dropped below 15 psi so I finished the 2hrs. Today when I opened the cooker to my surprise there was no water inside. What the hell? I’ve had an issue before where my agar plates filled with water so i figure all this water has ended up in my jars. No standing water is in my grain jars but they do look more moist than they did on my inaugural grain jar prep. Any ideas on why I keep having PC issues? I went ahead and inoculated the jars even though they seem to have too much moisture. I think I’ve read that they will be more susceptible to infection but what the hell. Any advice would be greatly appreciated. Thanks

Check out Bodhisatta where he has a link about PCing. Put some quarters on the weight so your not allowing mad steam to escape at 15 psi. You should have plenty of water at the end of a cycle and it will run very quiet. The weight almost doesn’t even move.

Once you achieve the desired pressure, turn down the burner as low as it will go and still maintain pressure. There is a sweet spot. You will find it.

Sounds like you had the burner too high. Once you reach pressure turn it down so the rocker only only jiggles occasionally. When it’s constantly jiggling aggressively like you had it, it’s constantly letting your water out as steam.

Aside from adding some quarters as weights, if you have used your PC quite a bit it might be good to soak the jiggle weight in vinegar for a day or two to remove any mineral deposits. If you have a lot of crap in there, the seal is not as good and more steam gets out.

Thanks folks. All of you pretty much saying this is from having too hot a burner makes sense. I have been trying to run hotter thinking more pressure would be better. Next time once I reach pressure I’ll be sure to run as low heat as possible while maintaining. So what should I expect from overly moist grains? This was also my first attempt at using a LI.

Having your grains be a little wet and then using LI can be an issue but is still workable depending how wet.

I did a batch that was like that and had some definite liquid at the bottom of the jars. I laid some on their side for a day or so and all the grains stuck there and sort of colonized and all the other grains went well. The same thing happened with the jars I left upright.

When I went to spawn them I broke them up carefully so that the semi colonized real wet grains didn’t mix with the others. You might need to use a spoon or something to only get the ones you want.

I spawned a shoe box with only the overly wet grains from each jar and it ended up putting out a nice flush before succumbing to dreaded teal mold.

Thanks. I don’t have standing water even after adding the splash of LI so maybe I’ll end up okay.
