Hi there ,
I am gearing up for my first ever run at a PF TEK with Cubensis GTs.
Something I am concerned about is that most of the Guides/youtube tutorials are made by North Americans where the ideal temps for incubation are expected in the general environment it seems. However it can be quite cold in summer here average temps in june can hover well below 20C / 68F.
So once I inoculate my jars should I be looking to rig up some sort of incubator to keep them at around 27 degrees Celcius / 80 F ?
Do I also need to keep them artificially heated up in the shot gun fruiting chamber stage ?
While I have your attention , once I remove the foil to inoculate should I put it back on ? I cant get a clear answer on that , some guides do some say don't just leave it with the holes open and the layer of vermiculite on top to protect from contams.

Do you not have a climate controlled home? My house stays about 70 year round. Inside the jars will be a bit warmer. We're in a good place with no effort

Over winter my growroom was between 50-65f. I was doing shoeboxes but they grew and fruited fine.
The colonizing jars on the other hand took forever. If it got to like 60 or less they basically stopped.
So I would keep the jars warm during colonization but for fruiting it won’t make such a big difference.

Do not incubate your jars. Use ambient heat like a space heater.
As long as its above 60F, you should be fine. At the bare minimal, use a insulated box as mycelium do create some heat and using an insulated box will preserve that heat. But a nearby space heater like those oil-filled radiators is the best in my opinion.
