Seems like they have appropriate surface moisture. I would keep doing what your doing.

The cake won't contam if it's healthy don't worry about that, and it usually takes about 2weeks to see the first pins sometimes sooner.

yes, i've been reluctant to post bc i am winging it and learning as i go, and know i have a pretty different setup here lol
ok inoculated rye grain bags w liquid, colonized in bags in cardboard box in closet in the dark and they were slow (no light) but did great.
transferred to prepasturized sub mix coir, verm, manure bag w filter patch and let colonize, put on 12/12. opened it up increased fae and began misting/fanning bc sub was getting drippy, alot of yellow that i was afraid was turning green, and sub surface was covered so trying to move it along.. i left in bag to reduce risk of contam since i am not concerned about quantity as much.. are we gonna be ok you think? thankyou for all of the help.

ok thx! i feel much better and will keep posting. so many beautiful cakes here, i think i will light them up from the jump and let the sub colonize more from now on. the bottom of the sub and bag have been the worrisome part, more drippy and yellow areas, some dark spots that can look blue green. casing would probably solve that issue? but it and dunking make me nervous. also i do not have the luxury of making a big mess.. any suggestions?

Post some more pictures if possible, there is some big blobs on the cake and I do see the color diffrence of the cake, Probally just bruising.
Most of the tubs I've had that went bacterial usually produced blobs similar to this. Too much spawn and too wet can also produce alot of blobs.
Hard to tell but the cake looks like it has water pooling on the surface.

Yeah it's too wet, don't mist as much... If those pools are still all over the surface then get some kitchen towel and lightly dab the excess moisture away.
If you take too much moisture off its fine just mist again but don't let It pool anymore.

The caps look small and the stems look lanky. The small caps could be genetic, iv had cultures do that but ambient light should be enough. Fanning isn't really keeping your fae up like exposure to the outside of the container. Make sure your closet light is in the 6500k range and try opening the container up a little. But nonetheless you are getting fruit so thats a good thing.
