Never pinning - but getting knots and sub looks great?

So - I am getting tubs to knot and look great, albeit slowly, but they are never pinning. This picture is at 19 days May 23rd, and they look almost exactly the same 8 days later? Any thoughts what is wrong?
These are in CV mixed to the 5050 tek specs Possibly too much spawn to CV - 7 quarts spawn to 75% of CV mix (650g coir, 2 quarts Verm, 1 gallon h2o)
Any thoughts? This is my second attempt at tubs that has done the same thing... Took off, colonized well, looked good, seemed to knot... then did nothing.

This is 19 days since it's been fully colonized or since spawning? It's been exactly 8 days with 0 changes from this current state? You're completely sure nothing has changed?
What are the temps in your growing area?
If it's knotting why are the FAE holes taped shut?

I think it needs more air, I don’t even see knots.

I think not enough FAE too. I've read that a sign of good FAE is that there is no condense on the lower side of the hole (correct me if I'm wrong). I see a lot of condense there, just as much as on the rest of the wall of the tub. Evaporation is key, so no FAE, no evaporation.

The days from start I mentioned = Day 1 is mix spawn with bulk. So this picture is 19 days after bulk sub mixed with spawn. Now at 28 days....
And...
Change? Well, it has changed slightly. I would say there is more solid mass now vs that picture. Totally possible I am confused about what true knots look like.
Temp? Temp is 72-78 degrees
Tape? Honestly - I thought I was supposed to leave the tape on? It is micropore tape. I switched from duct tape to micropore tape around day 10.

I see, thought it was regular tape. Though, I never got enough FAE for tubs using micropore tape. Very loose polyfill and some extra fanning may help you a lot. Evaporation is probably the most important pinning trigger, your substrate should be drying off on top if there is enough FAE.

Will try poly fill and fanning immediately! I hope that is the solution, cause grain, transfers, substrate colonization, etc has been going well... but I can't get anything in large mono's to pin and its frustrating the hell out of me.

I see mushrooms face down at 9:00. I think it is probably just enjoying muching down on that aluminum tray.
Also yeah up the fresh air and dry the surface out a bit.
