Shrooms gone black after drying

Hey guys
A recent batch I got from Victoria SW have come out black after drying.
Just wanting to know if I should throw them out or not as I’ve heard bad things about them being black?
I left them to dry on a rack, then in the oven at 40 degree with the door open, then Into a tub with desiccant. They are cracker dry but a deep blue/black colour.
I did give them a wash before I began the drying process as they had dirt and sand on them - I’m thinking this could be the issue and they have developed mould.

They smell pretty rank to be honest, like mouldy feet or something

If you washed all the sand and dirt off and those white specs have shown up after drying, definitely throw it out. It’s gone mouldy..
Perhaps use a small brush to get the dirt and sand off next time, it also might of worked out if you put them straight into the oven rather than setting them on the dry rack initially.
I recommend getting a food dehydrator they never fail to quickly dry out even the most waterlogged shrooms..

I’m unsure if the white spots are sand or have come up
I’ll throw them out in case as they smell shit.
I’ve always thought to leave them dry out on a rack for 24 hours before putting in the oven?

No worries.
Never used a dry rack tbh. I’ve always put them straight into the oven/dehydrator. With the latter getting the job done faster.

This happens when you dry in an oven where they get very warm and humid. They turn black when the mushrooms cells break down and the active compounds react with the air and oxidizing substances within the mushroom itself. The sickly sweet smell is associated with that level of oxidation. Try freezing a mushroom solid, then let it defrost. It will turn black before your eyes and smell the same.

I'd concider them gone. Maybe still good for tea, but I wouldn't expect much. Eating sandy mushrooms isn't the best you can do for your teeth.

I found my first decent batch of subs. Around 4g dried. Looks as though I’ve taken them out of the oven a little too soon or haven’t screwed the lid on tight enough.
Is there anyway to use these?
Timeline: Found Saturday. Dried in the evening in the oven. Put in container with desiccant Found to be black and moist on thursday night.
