I seasoned the eggplant before doing the traditional dish. When I make Italian meals I prefer them to either be on the spicy side or the slightly sweet side. Just a tad for the sweet route though. I had some spicy sopprassata that I used to imbue some extra flavor into the eggplant.
Sometimes this is a good choice, like when the eggplant isn’t at its best or you have to prepare in a hurry and it’s too tough or something.
Eggplant hasn’t been great these past months in the markets around where I’m at, but when it is

No need for an eggplant sauna, just some salt 
Seriously I think the difference between good eggplant dishes and bad ones can come often down to whether someone sweat it before they cooked it.
That and sauce. Good sauce is important.

I love makin naan pizzas, absolutely delicious and easy as pie. I make my own sauce and get my fav cheeses, throw it in the oven and fuhgettaboutit

If you use beer instead of yeast in your couch it will taste a lot better and have a batter texture. Takes longer to proof (good 6 hrs) but its soo good!

I made a dandelion and clover flower wine last year. Was awesome.
Also, making pizza dough is SOOO easy so I make"pizza" all the time too.
However, some of my stuff is really just thin baked bread with whatever I have on hand. FOr instance my venison pecan "pizza" last night with Shiitake mushroom salt and homegrown parsley.
