dried shrooms in honey will last a while, the honey itself is pretty stable and will keep oxygen away. Honey is mildly acidic, so it will leech out some of the magic.
Fresh shrooms....I don't know...the honey will soak up some of the moisture...but when honey gets watered down all the yeast and bacteria naturally present in it can start to grow...that could be bad news. Mushies will rot if they're not dried within a few weeks, maybe a month at the outside. Immersion in honey may slow this but no idea for how long.

Does anybody actually know about storing with fresh? I just made five 6 oz baby food jars with about 50 wet grams or so in each. I thought it'd be all good, but if it's not, then I need to trip with several people asap.

Do not store fresh mushies in honey. They will become real nasty. That is all. I lost all of mine.

Agree with Soup;
I might have put too many fresh fruits per volume of honey, but the honey turned into 'honey water'--very fluid. Honey doesn't normally spoil because of its incredibly high osmolarity, but after a bunch of fruits give up their water it becomes contam-heaven.
You might get away with it if you don't use that many fruits [but kinda spoils the potency of the resulting mix;]

By all means don't store fresh mushrooms in honey. The reason honey is antibacterial and anti fungal and anti shit that grows is b/c it is so hypertonic. It sucks all the water out of the microbes and they die. But when you throw in mushrooms which are 90% water you lessen the hypertonicness open the door for evil shit to grow and rot the mushrooms. Stick with dried in honey. Or eat the fresh ones.
