Mushrooms looking both water logged and low rh. what to do?

hey. been lurking for a while. first post. sorry for grammar and such, not a native speaker. 
I'm new to this, and every time i try to grow cakes in a sgfc (of the few i did) i seem to run into some problem.
This batch was a first real success with proper BRF. mycelium colonized everything in two weeks, no contams that i could see. i had to move them into the sgfc 3-4 days before they finished consolidation as they started to pin and some aggressively grew in vitro. which is another lesson learned for me, not to leave jars with too much air circulation and indirect sunlight when they seem to grow so wickedly fast.
i took of the pins as gently as i could, soaked for 18-24h, and rolled them. not much verm sticked to the sides and the mycelium grew it anyways.

i also underestimated the amount of perlite needed for my sgfc so i believe it is not high enough. i can't get more perlite for another week now, and the mushrooms are coming out looking water logged (at least that's how they look to me from looking at other threads here) and also with really weird caps, white and crusty.

any suggestions on what exactly is it? more likely over watered? or is it a lack of rh? what is the recommended next step in such a situation?

If you drowned them and they stopped growing, Harvest+soak.
